Not sure which grade of Maple Syrup you like the best, then try all 4. There are 4 grades of Maple Syrup: Golden, Amber, Dark and Very Dark. Early in the season when the weather is cold we produce a very light colored syrup with a delicate taste (Golden) as the weather warms up and the metabolism of the tree is changing as it starts setting the buds which produce the leafs the syrup gets darker in cofor and stronger in maple flavor.
